Organic Christmas Cake bag

An easy Organic Christmas Cake mix that can be made either in advance or last minute! This mix makes enough for a 12 slice cake, in a deep 20cm cake tin. Nut free version available. 

Including:

Fruit mix (Currants, Sultanas, Raisins, Cranberries (with Apple juice) Mixed Peel , Nuts - Almonds*, flour, spice mix, sugar. Full recipe card and instructions.

Things you will need to get from home:

• 150ml Alcohol of choice (sherry, brandy, rum) for soaking (or use orange or apple juice or black tea for alcohol free) plus extra for feeding.
• 4 large eggs (or alternative binding ingredient e.g. Chia Seeds and water, Flaxseed and water)
• 250g Butter (or dairy free alternative)
  
• 1 teaspoon Vanilla Extract (optional)
• Half a teaspoon of Baking powder
• Glace Cherries (optional)
• Icing/marzipan if you wish to ice your cake
• 20cm cake tin with deep sides
• Baking parchment

* Nut free version includes extra fruit at the same weight.
